Counterspace Mid City’s Bacon and Spinach Quiche

The back-to-school frenzy that descends this month can seem ominous for parents of school-age children. But one way to salve the hectic rhythm is with a satisfying breakfast. Counterspace’s Mid City location, which opened back in January, serves eat-in or pick-up breakfast along with its usual signature peanut-free cakes and cookies.

Pick up freshly baked cinnamon rolls to serve at home or stop by after carpool for well-earned quiet time over a breakfast taco, biscuit sandwich or warm slice of bacon and spinach quiche. “We make the crust from scratch,” says owner Sarah Joy Hays. The quiches are also sold whole. And Counterspace’s top-selling salted chocolate chip cookies in a lunchbox are a surefire way to earn parent points.
